there’s a surprising complexity to boiling eggs[1][2] but if you don’t really care about egg dimples and just don’t want bits of egg sticking to the shell as you peel, i found the important bit is to

specifically, get water under the membrane. that’s the filmy stuff between the boiled egg and the shell, and if there’s no water all three bits love sticking together. the common advice is to peel under running water[3], but you can also do this by peeling in a bowl of water, or even just wetting your fingers and wetting the right bit of the shell as needed
